Valentines Day :: Love Cake

The day of 'love' is just around the corner - wait, let's backtrack... those who call it Hallmark day, come on... Give a little ;)

Now I can secretly tell you that I'll be baking my lovely a 'love cake' for V'Day 2013... A delicious strawberry and coconut filled fluffy, moist, decadently sweet love cake! And because here at O&O we like to share... here is the recipe for you to enjoy too...

Love Cake

1 box (equivalent to 525g) white cake mix (yep, making this one easy!)
4 tablespoons strawberry gelatin powder
2 tablespoons all-purpose flour
1 teaspoon baking powder
2 tablespoon granulated sugar
3/4 cup vegetable oil
4 eggs
1/4 cup water
1/2 cup pureed strawberries
1 teaspoon vanilla extract
1/2 teaspoons coconut extract
1/2 cup fresh strawberries, finely diced
1 cup coconut, finely shredded in food processor
several strawberries to fill cake and garnish

Preheat the oven to 175C (345F).

Combine dry ingredients in mixer bowl and stir together. Beat in oil, eggs, water, strawberry puree, vanilla and coconut extract. Mix well, so no lumpy bits are left!

Stir in diced strawberries and coconut. Pour into two greased and flour round cake pans (8 or 9-inch).

Bake for 25-35 minutes, or until a tooth pick inserted into the center of the cakes comes out clean and the cakes are pulling away from the sides of the pans.

Put pans on wire racks and cool for about 10 minutes or slightly warm to touch. Remove from pans and leave on racks to cool completely.

Now, let's get cracking with the frosting!

Cream Cheese Frosting (seriously delicious!)
225g cream cheese, softened
1 cup butter, softened
450g powdered sugar
1 teaspoon vanilla extract

Beat butter and cream cheese until smooth. Add vanilla. Slowly beat in powdered sugar until desired consistency. ** Just add a couple teaspoons of milk if icing is too thick.

Spread some icing on first layer, then top with sliced strawberries.

We have three equally beautiful suggestions for your frosting from basic right through to pure extravagence:
1. Place second layer on top and ice the rest of the cake with all white frosting, covered in shredded coconut. Angelic!

2. Place second layer on top and ice the rest of the cake.Cover entire cake in shredded coconut and garnish with fresh strawberries. Perfection!

3. If you wanted to get really interesting, ice the cake ombre! (just remember that the inside of your cake will be pink!) Place second layer on top and ice the rest of the cake. Seperate your frosting into bowls, as per below image. Use white icing for top layer, go one step darker per layer working down. Use an icing tube for swirls and the fourth image down for inspiration! bon appetit!
