You are certainly going to get your daily dairy fix from this delicious recipe, which we admit tastes very similar to cheesecake. These cream cheese pancakes are best built into a serious stack, then shared (if you dare!) or, whip some cream and vanilla bean paste and fold each pancake over with the cream filling inside... These are the ultimate indulgence.

What you'll need...
2 oz cream cheese
2 eggs
1 packet sweetener or 2 tablespoons of organic caster sugar
1/2 teaspoon cinnamon
Now, let's get cooking...
Put all ingredients in a blender or electric mixer and blend until the mix is smooth. Let rest for 5-10 minutes so the air-bubbles settle. Now, pour 1/4 of the batter into a hot pan lightly greased with butter.
Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Serve with your favourite syrup and fresh berries.
